Cooking Rabbit Stew and Venison Flabread Pizza at Nimble Hill Vineyard & Winery

Rabbit Stew Recipe:

1 rabbit about 3 lb
½ stick unsalted butter

Tablespoon oil
1 large onion chopped
4 cloves garlic, peeled, crushed and chopped
6 sprigs fresh thyme chopped
1 sprig fresh oregano chopped
1½ cups water
1 cup white wine
1/2 cup heavy cream
1/2 lb mushrooms quartered

2 leeks sliced
Tablespoon capers

2 tablespoons Dijon mustard

Heat the oil and butter in large stock pot.

Add the garlic and rabbit until the rabbit is browned.

Remove the rabbit and deglaze the bottom of the pot with dry white wine.

Add the water, rabbit, herbs, onions, mushrooms, leeks, and capers and simmer for 45 minutes.

After simmering for 45 minutes add the mustard and cream.  Simmer for an additional 45 minutes.

Add salt and pepper to taste.
