Cafe Classico II Puttanesca Sauce
1 oz. extra virgin olive oil,
1/4 red onion diced
2 slices pancetta (Italian bacon) diced
. 1 tablsp. capers
12 Calamata olives
Fresh Basil to taste
10 oz plumb tomatoes
Pinch of salt
PInch of red pepper
2 oz. red wine


In saute pan, add oil. When oil is hot, saute red onion, pancetta, capers olives, red pepper, red wine for 2-3 minutes. Add plumb tomatoes and salt. Saute- 5 minutes. Add chopped basil Add sauce to any pasta you like.
