JAKE'S STUFFED MEATLOAF
Meatloaf Ingredients:
3 pounds ground venison (could be mixed with pork)
2 eggs
2 tablespoons Italian Seasoning
Salt
Pepper
½ cup Italian Flavored Bread Crumbs (may need to add more)
½ grated cheese (I prefer Pecorino Romano)
Place all of the above ingredients in a large mixing bowl. Mix well using both hands. If the meatloaf mixture feels too wet to mold, add more bread crumbs. Once thoroughly mixed, preheat oven at 350 degrees, set the bowl aside and prepare the stuffing.
Stuffing Ingredients:
½ pound of sliced bacon (cut into small pieces)
1 medium chopped onion
1 package frozen spinach (thawed and squeezed)
1 cup of shredded cheese (mozzarella and/or cheddar)
Render the bacon pieces in a large frying pan. Once the bacon is cooked (not crunchy), add the onions to the bacon and the bacon grease. Fry the onions until they are transparent and then add the spinach. Continue frying this mixture for several minutes. Remove from heat.
Place the meatloaf mixture on a sheet or two of plastic wrap. Flatten the meat until it is about ¾ of an inch thick. Spread the spinach mixture evenly on top of the meat. Next add your layer of shredded cheese. Using the plastic wrap, start rolling the meatloaf until it could be lifted and placed in a baking pan. Place in 350 degree preheated oven and bake uncovered for approximately 1 ½ hours.
