French Toast (Reduced Fat) Grilled Bread Dipped in Fat Free Milk and Egg Substitute Cinnamon Custard

Ingredients:
Fat Free Milk 1 1/4 Cup
Pasteurized Egg Substitute 1 Pint + 3/4 Cup
Ground Cinnamon 1/4 Teaspoon
Imitation Vanilla Extract 1/2 Teaspoon
White Bread, Sliced 48 Slices
Procedure:

1. Combine milk, egg substitute, cinnamon and vanilla. Mix until well-blended. CCP-- Hold refrigerated at internal temperature of 40 degrees F. or below or on ice at all times for use. 2. Preheat griddle to 350 degrees F.

NOTE: Cook in batches of 24 slices. 3. Evenly spray griddle with vegetable oil spray (not listed). Dip bread in egg mixture. Turn to evenly coat. Drain excess.

NOTE: Discard leftover egg mixture at end of meal period. 4. Place bread on griddle. CCP-- Grill for 2 minutes on each side or until golden brown and minimum internal temperature is 145 degrees F. (for 15 seconds). Cascade in 2'' full pans. CCP-- Hold hot (140 degrees F. or above) for service.

Portion: Serve 2 slices.
